Why Eat American Buffalo?

Buffalo meat is well known for being a lean and a heart healthy alternative red meat. The meat is a dark red color from the high levels of iron and is free of the intramuscular fat that causes marbling in beef. All lean meats should be cooked using low heat and slower cooking times (please visit the cooking tips link for more information).
