Sirloin Tip Medallion
This cut is very tender, but only if cooked to rare. Sear on both sides briefly in hot pan with oil. Put into preheated 350 oven on a cold pan with a digital cable thermometer until it reaches 115 degrees. Remove and rest a full 10 minutes.
This steak is cut from the center of the sirloin tip and when cooked rare is very tender and juicy.
