Cook rare only by first searing on all sides 1 minute in very hot pan with high-temperature oil such as ghee, tallow or grape seed oil. Move to oven safe cool pan, insert digital read thermometer set to 115 degrees. Place into pre-heated 425-degree oven until the steak reaches 115 degrees. Remove and place on a plat to rest for 15 minutes.
